Sugar kelp has a deep umami flavor while also having a certain sweetness. It works great in both savory and sweet dishes and can be dried, fried, grilled, baked, woked... - you name it. Sprinkle dried seaweed flakes on salads, pasta or use as a natural substitute for salt. Wrap fish in fresh (or blanched) kelp leaves and place on the grill. Sugar kelp is good for bread baking where it helps in the fermentation process and adds minerals and vitamins to the bread. 

Exact nutritional values for kelp depend on the month it was harvested, but overall it contains an impressive variety of nutrients. Kelp has minerals, vitamins, fiber and antioxidants. Above all, it is an excellent source of natural iodine. Iodine is important for a functioning metabolism and can thus help boost energy levels. Other nutrients that sugar seaweed is rich in are iron, magnesium, calcium, potassium and vitamins A, C, D and K. Of these, for example, iron is important for oxygenation in the body and calcium and vitamin K are vital for bone health.

Sugar kelp also contains the fiber, alginate, which can be extracted for various uses, such as thickeners or stabilizers.
